Politeness or desperation? I never know. On the rare occasions I get interviews I send them but I always wonder whether they do more harm than good
I also send them as a courtesy. Especially if I find the potential job is a dream job.

Exactly how should they do more harm than good?
Something like: “Oh, look, a pathetic thank you email, this guy is desperate, we were nearly thinking of going ahead, but let’s drop him now”

Especially if you sensed a good vibe during the interview, and you really want that job, yes, strike while the iron is hot.

Really helps if you can fall back on something interesting you discussed and increases the chances of your name standing out just keep it short and professional

I haven’t interviewed anyone in years, but when I got an informal one liner thanking my for my time I would find it a polite gesture, and I used to do that myself when I was on the other side of the table.
Something like: “Bob - it was great to meet you today, thanks again for your time. Look forward to chatting more soon”.
If someone sent me an over the top, obsequious, unctuous long mail, that would be off putting, of course.

Thank you notes are a keen way to express any sentiment that wasn’t stated. Let’s the company know you’re interested in the opportunity quite able in contributing to the group.
“Dearest Bob,
It has always been my dream to be interviewed by you for a role. Today, you made my dreams come true and did so with poise and grace. I can only hope that, when the time comes that you must decide who will progress to the next stage of preceedings, my name is one that you will remember with fondness…”
